Honey is one of the most ancient of all ingredients known to humankind and yet it is perfect for a modern day people. Honey is the ideal sweetener for the health conscious person. Minimally processed and naturally sweeter than any other sweeteners. Honey can be used in dozens of recipes and is economical per serving.
Honey is produced in about every state in the nation and is available in many different varieties, based on more than 300 identified floral sources. It can be readily found in supermarkets, farmers markets, specialty food stores and county fairs.
Honey is an excellent source of easily assimilated energy and has been found to be one of the most effective forms of carbohydrates to ingest just prior to exercise, and an excellent carbohydrate source for post-workout muscle recuperation and energy repletion. This could translate into greater endurance during a workout or a race. Honey appears to be a carbohydrate source that is relatively mild in its effects upon blood sugar compared to other carbohydrate sources.
If you have allergies, honey can be beneficial. If you eat honey that is local to your area, it may prevent your seasonal allergies. Bees use the pollen from local plants and eventually it ends up in your honey.

Tupelo Honey

Tupelo Honey is produced from the Tupelo gum tree that grows profusely along the chippola and Apalachicola rivers of northwest Florida. Here in every swamp, this honey is produced in a unique fashion. Bees are placed on elevated platforms along the river's edge, from which, during April and May they fan out through the surrounding Tupelo blossom laden swamps and return with their precious treasure.

Real Tupelo Honey is light amber in color, light golden with a greenish cast. The flavor is delicious, distinctive, a choice table honey.

Besides carbohydrates, honey contains protein (including enzymes), amino acids, vitamins and minerals. While the amino acid content is minor, the broad spectrum of approximately 18 essential and nonessential amino acids present in honey is unique and varies by floral source. Honey contains polyphenols that can act as antioxidants. Antioxidants play a role in cleansing the body of free radicals, reactive compounds that can contribute to serious illness, such as cancer as well as heart disease.

The antibacterial properties of honey can help clear infection in wounds, while its anti-inflammatory action can ease pain and improve circulation, thus promoting quicker healing and reduced scarring. Honey may also be effective in the treatment of ulcers, stomachaches and dehydration.
